What it is
The cooking is contemporary Mexican and leans on vegetables and fish, shaped by the tropical climate and by a garden the chef grew for the restaurant. The name comes from the plumeria rubra flower. Dinner is à la carte or a nine-course tasting menu, and at launch the daytime offering was small bites only, so check hours before you plan a lunch.
The room is earthy and red-toned, with an open kitchen, custom ceramics, a collection of agave spirits and an ocean-view terrace. Dwell describes pigmented pink precast concrete, while Elite Traveler describes a volcanic-rock inspiration.
Why it matters on this coast
As late as November 2025 a Punta Mita journal still called Rubra the peninsula's newest culinary destination. It sits alongside Aramara and Dos Catrinas at the Four Seasons, and the beach clubs, as a reason to plan an evening out.
